Let's Start with the basic spice mix. I like to quadruple this recipe and keep this blend on hand as we use it regularly
Val's Tex-Mex Spice Blend
1 Tablespoon Chili Powder
1 Tablespoon Smoked Paprika
1 Tablespoon Cumin
1 Tablespoon Garlic Granules or Garlic Powder
1 Tablespoon Onion Granules or Onion Powder
1 Tablespoon Basil
1 Tablespoon Salt
1 Tablespoon Cilantro (optional)
Mix Thoroughly and store in a sealed container. Use 1 -2 Tablespoons per pound of Eden Pure Beef. See directions below for detailed instructions.
Slow cooker or Instant Pot Taco Beef
Add 1 pound of Eden Pure Premium ground beef, 1/2 cup of crushed tomatoes or your favorite salsa and Val's Tex-Mex Spice Blend to your slow-cooker.
Cook! Either on low for six hours, or high for three.
IF you’ll be close by, every hour or so, stir the meat and then drain off any liquid that accumulated into a heat-proof container.
If you won’t be home while the meat cooks, it’s OK to skip this step.
You can also substitute stew beef or cubed steak (either as individual steaks or cut into strips for "fajita style" cubed steak). See directions below for preparing the meat for these options
Quick Skillet TexMex Ground Beef
Heat 2 Tablespoons of avocado oil in a large skillet over medium- high heat. Add 1/2 small onion, finely chopped and cook, stirring occasionally until the onion becomes slightly translucent. Add 1 pound of Eden Pure Premium Ground Beef to the pan, stirring to break up the pieces. Stir and turn the mixture every few minutes for even browning. When the beef no longer has pink showing, add 1 -2 Tablespoons of Val's Tex-Mex Spice Blend and mix in thoroughly.
Tex-Mex Cubed Steaks
Start with thoroughly thawed Eden Pure Beef Cubed Steaks. Add 1 - 2 Tablespoons of avocado or olive oil to a large skillet and heat over medium-high. When the pan is hot, add cubed steaks, being careful not to crowd them. Sear on each side about 2 minutes. Sprinkle 1 -2 Tablespoons of Val's Tex-Mex Spice Blend across the steaks and add 1/4 cup of water or beef broth to the pan. Cover and turn down the heat to low. Simmer for 7 minutes or until liquid is absorbed by the cubed steak.
Tex-Mex Cubed Steaks Fajita Style
Cut cubed steaks into 3/8" strips while they are still slightly frozen. Toss with a tablespoon of cornstarch per pound of cubed steak plus 1 -2 Tablespoons of Val's Tex-Mex Spice Blend and allow to rest while you heat 2 Tablespoons of oil in a large skillet over medium-high. When the oil is hot, add the meat and spices, being careful not to crowd the pieces or they will "steam" rather than sear. Turn cubed steak strips to sear both sides and remove from the pan as they are done (smaller ones will finish first)
Tex-Mex Stew Beef Instant Pot Style
Turn Instant Pot to Saute on High. Add 2 Tablespoons of avocado oil. Allow to heat 5 minutes. Pat thawed stew beef to dry the surface ensuring a good sear. Add stew beef to the Instant Pot and stir to coat pieces in oil. Saute 5 minutes, turning pieces to brown all sides,
Turn Instant Pot OFF . Add 1 -2 Tablespoons of Val's Tex-Mex Spice Blend plus 1/4 cup of water or beef broth put lid in place and lock. Set to "steam" to pressure cook on HIGH for 20 minutes. Allow to come to pressure on its own for 10 minutes before releasing the steam valve.
Serve any of these variations as meat for:
Tacos (fill hard or soft tortillas with beef, lettuce, tomatoes, slices of jalapeno or bell peppers, and avocado. Top with shredded cheese and sour cream)
Burritos (roll up wit
h your favorite accoompaniments in a burrito wrapper)
Taco Salad (Start with a bed of romaine and add all your favorite veggies, cilantro vinaigrette, and a twist of lime)
Tex-Mex Stir Fry (sautee chopped onion, bell peppers, and garlic. Stir in your choice of Tex-Mex Beef and serve over rice or with tortillas. You can even stir your meat and veggies into Eden Pure Beefy Mac N Cheese for Tex-Mex Beefy Mac N Cheese!
