One of my favorite leftover pot roast ideas is so simple! Just slice the leftover pot roast into thin strips, add a can of cream of mushroom soup, one cup of beef broth, and put the whole thing in the slow cooker. Then, a few minutes before serving, stir in a half a cup of sour cream.
Serve the whole thing over egg noodles and you have one of the best leftover pot roast pasta meals you have ever had. You only need to simmer it for about 3 hours on low.
Below I've included instructions for making a quick mushroom sautee and roux, for your own homemade "cream of mushroom soup" base!
This recipe is simple and easy to tailor to your individual taste. The best burger should be juicy and flavorful, not redolent of "packet of onion soup mix". This recipe uses coarsely grated fresh onion to retain moisture and enhance the flavor of the beef, but you can use a similar amount of other vegetables in its place if you don't care for onion or want to take the taste in a different direction!
This dish meets both the "Keto-friendly" and "Kid-friendly" standard. Leftovers are great for lunch ... if there are any.
I use a 9" x 15" casserole dish for this recipe. If all my kids aren't home and there are leftovers it makes for a great lunch (hot or cold according to my boys!). If you are feeding a smaller crew, just halve the recipe and use a 9" x 9" dish.
