The merlot steak was found a few years ago in a challenge to butchers to find more steak cuts on each carcass.  The merlot was an unexpected find hidden between hardworking leg muscled.  It is a large medalion that is ranked as one of the top four most tender steak.  Cooking is simple - salt well and thaw to room temperature before cooking and cook to rare or medium rare.  We recommend using avocado oil and a cast iron skillet to sear your merlot and be sure to let your steak rest for 5 minutes
